Executive Asian Chef Role in Fiji
Located at the resort island of Denarau surrounded by multiple five star hotels
Team of 80 chefs and stewards.

THE ROLE:
Taking responsibility for the kitchen operation of a busy resort operation across multiple outlets, you will ensure the consistent quality of all meals produced. Must be innovative and able to deliver exciting menus that meet the target market for each outlet. This is largely an outlet driven operation, with minimal banqueting, so there must be a desire to deliver menus that appeal and capture guests within a highly competitive resort environment. If you can design a creative menu with local and seasonal ingredients within budgetary constraints this is the role for you

RESPONSIBILITIES:
Drive menu planning and development
Balance administration with operations, supporting and developing a local team
Constantly pushing to reduce Food COG and payroll
Ensure adherence to Food Safety Standards

EXPERIENCE:
Current Executive Chef with resort experience or Exec Sous looking to step up.
Prior experience within Asia or Pacific desirable
Relevant trade qualifications
Creative flair menu design with an acute awareness of current culinary trends
Ability to work well under pressure and handle multiple priorities effectively
Outstanding communications and leadership skills
Able to balance the challenges of multiple kitchens, high volume covers within space constraints.
